The 12thof July is a festivity in which the Cava day is celebrated in Spain and from DIFMAQ ROURE, manufacturers of rotary labelling machines, we want to remind the importance of having the right equipment to make an accurate and reliable labelling.
What is cava
Cava is a sparkling drink originating in Spain and is known for its exquisiteness and elegance. Considered the Spanish equivalent of French champagne, cava has gained worldwide popularity thanks to its unique taste and special production process.
Where cava is produced
Cava is mainly produced in the region of Catalonia, although it is also produced in other parts of Spain. The Cava Denomination of Origin (D.O. Cava) is the entity in charge of regulating and certifying the quality of this drink. Cava is mainly made from the Macabeo, Xarel-lo and Parellada grape varieties, although other grapes such as Chardonnay and Pinot Noir can also be used.
What is the cava elaboration process?
The cava is made according to the traditional Champenoise method, based on a second fermentation in the same bottle from a base wine to which sugar and yeast have been added.
The temperature at which this second fermentation takes place will determine the size and release of the bubbles.
The yeasts chosen will be the key to giving each cava its own unique and non-transferable personality.
The entire cava production process must last a minimum of nine months in contact with lees and always in the same bottle in which the second fermentation took place.
The aromas and characteristics of the cava will develop with the ageing process that takes place in the underground cellar at the right temperature and humidity.
- Primary aromas develop in the first months of ageing and come from the grapes themselves. They are aromas of dried fruit, citrus and flowers.
- Secondary aromas develop when the ageing process approaches 15 months and are reminiscent of bakery aromas.
- Tertiary aromas appear with ageing of more than 15 months and smoky and roasted notes are achieved.
The ageing of the sparkling wine will depend on the number of months it is left to age in the underground cellars, which will be essential to obtain the maximum quality of the cava.

But cava producers, in addition to making a sparkling drink that is excellent to the palate, must also take care of the image of the bottle, the design of the bottle and the label. And to do so, they must have equipment that applies the label accurately, reliably, robustly and in line with their needs. Orientation of labels on cava bottles
DIFMAQ ROURE has labellers without bottle orientation for the basic labelling of cava bottles. On the other hand, orientation systems can be incorporated when the requirements of our customers are more demanding.
This orientation can be done either in the required position in coordination with the capsule (corporate branding or emblem) or with special characteristics of the glass itself. As well as in those cases where labelling must be incorporated in a special engraving on the bottle.
